I have never been defeated by curries but jackfruit was so evasive. I tried three times to make Jack Fruit a.k.a Phanas, Kathal and failed miserably. Once the curry became too mushy mushy as I used a pressure cooker. The other two times it was too dry and burnt.
So what asked for help. I posted on by FB profile on how to make Jack Fruit curry and I got more than 40 comments all brimming with ideas. There goes the productivity of India InC.
So finally I followed what was told to me on FB by friends and emerged as a winner. Yes mission accomplished. Jackfruit curry here I come.
The recipe was quite simple- fry the jackfruit a bit and keep it out. Then fry your regular onions and spices. Add turmeric, garlic paste, coriander and garam masala and fry them till onions are brown or the usual color that your wok gives out. Then add fried pieces of Jackfruit to it. Let it simmer and then add some tomato puree, stir it, wait for a while and then add some water and cover the wok. Come after twenty minutes and your Jackfruit Curry is ready. The whole thing will take about 45 minutes start to finish.
Here is the pic. Now don’t lick your computer screen. I can tell you it tasted heavenly. Almost like chicken 🙂 and for someone who has recently become vegetarian it was God sent.
Yes, this recipe has a caveat. It uses too much of oil. My next goal is to figure out how to make a slightly healthier version of this dish so that we don’t end up blocking our arteries.
